Your questions can be covered by several books. I will try and answer them briefly.
1) What are the different types of mainframe applications?
I would break it down into to four very general types:
a) Online transaction processing
b) batch processing
3) Database server
4) "New" applications: Web applications, FTP server, Java applications and more

2) What are the general performance issues that are expected?
Usually: CPU , real memory(known as storage on IBM mainframes), I/O.

3) What tools are used in performance testing mainframe applications?
For real time performance , specialized monitors are used. The common ones are Omegamon, RMF,TMON, BMC-Mainview, CA-Sysview and more
For historical performance analysis the above monitors have a historical component. Other specialized tools include CA-MICS and TDS

Hope this helps
