Logging ASCII codes when a barcode scanner reads a serial

I am in the process of trying to upgrade old PS/2 barcode scanners to USB scanners. The PS/2 scanners are programmed the way the factory employees can use them the best. I have no way of finding out how these were set up and need to be able to find the rules that were set to these scanners or somehow log the buttons hit when scanning the serial to create the new rules for the scanners.
