linux e-mail hosting

Hello everybody... I am not a guru in Linux or Unix, but, I have a fair knowledge on some of them to some extent... I am still trying and hope to become like some of you in future. Anyway, I have been employed in a new company as their network engineer. They have a mail server which is able to send and receive mails over the internet and within the internal network. Now, they have this mail hosting service on this server with some customer private e-mails routed through to allow them send e-mails outside. We had a meeting just yesterday and I was told that they are getting a new customer who would like us to host their e-mail services with a good backup plan for them. The mail server was built with Redhat enterprise server. Can anybody tell me the steps to follow so that, I can accomplish the task successfully without any problem?... This contract will be signed before the end of this week... Please I need some ideas and assistance to successfully do this on my own. Thank you.
