InterVLAN routing to communicate with different VLANs

InterVLAN routing allows different VLANs to communicate with each other. Now my question is If we want different VLANs to communicate to each other then why we are creating different VLANs. Why not put all interface in one VLAN. Objective of creating different VLANs are, that they don’t communicate with other.
