Check the Exchange Advanced tab in AD and make sure "hide from gloal address list" is not checked. If you are in cached mode go to your send/receive under tools and select "download address book". If you are not in cached mode, then check the exchange server and make sure the RUS is set to run. Check the time schedule it runs. Typically it updates once a day on off hours, like the middle of the night.
