Hyper-V without GUI on Windows 2008
Is it possible to install Hyper-V (Windows 2008) without the GUI and still have full use of all the features?

Yes. This is called a Core install of Windows Server 2008 and it is the recommened install. You would have to remote manage the box (as there is no GUI with core) but it would be full featured (with more memory available for the VMs).
