Live Migration can be instigated through SCVMM 2008 R2, by Right clicking on the VM and choosing Migrate. If you want to evacuate an entire host, simply put it in maintenance mode. (now on the Hyper-V servers you need to have a Failover Cluster installed and the VM needs to be enabled for High Availabilty).
