How to trace and log a “phantom” print job

Greetings, our company owns a string of distribution centers that use optio formatting for labels and packing slips. We have noticed lately a label print job that randomly occurs at different centers and different times of the day. This seems to be a bug of some sort that will just spool rolls and rolls of labels until the job is terminated through optio print queue or it completes. The job is around 80 MB and we have failed to trace or log this job since it appears to just pass through Optio for a brief moment, we would literally have be on the particular server, and printer at the exact moment the job enters to capture the log. Any suggestions?
