Q:
How many Exchange servers should I use in my company?
I'm attempting to set up an Exchange server for a company that currently receives email through POP mailboxes. Since the company has two websites, would you recommend two Exchange servers (one for each site)? Or would you suggest one Exchange server and simply have email passed over a LAN to a VPN? How should I approach this?

A single exchange server is just fine. Outlook can only connecto one Exchange server at a time so having two seperate Exchange setups wouldn't be of any use (not to mention expensive).

A single Exchange server can handle many domains. At my company we have about 10 email domains with different users having different domains at there default outbound domain.
