 How does Outlook Communicate with Exchange?

Hi all, I need to find a good resource (Web links preferably)that explains how Outlook 2003 and 2007 connect to both Exchange 2003 and 2010 (2007 doesn't matter for the purpose of this question). I need to provide the detailed differences between our current environment (E2K3/O2K3), and the environment we are moving to (E2K10/O2K7). Thanks in advance!
