How do spammers send email that looks like its from a real company?

How do spammers send e-mails that appear as if they came from a big company and more importantly, are there techniques to detect which messages are soam and which are real?  Are the emails being sent from a spammers server or do they hijack the company's mail servers. Is it possible for someone to create a fake server or add their own server to the company server list and then send malicious e-mails from it?

    This is an age-old technique that exploits weaknesses in how email works. There are certain nuances, but you simply enter anyone's name and email address into your email client and when you send the email it will look like it came from them. Anti-spam software can often detect this using various techniques - one of which is the domain of the host the spam is sent from does not match the domain of the user's account.

    Are the emails being sent from a spammers server or do they hijack the company's mail servers. Is it possible for someone to create a fake server or add their own server to the company server list and then send malicious e-mails from it?
    Both - either is possible...the latter scenario is less likely.
