"Do I partition half & half?", no never do this. If u do this, then where should u keep urt data, user files !! Cool and 1st think about this scenario..... if I understood correct, u want to isntall Mac with Wind7 (may be I am wrong, cause, I could not understand this line, as u wrote, "or can I do 2 snow leopard & lion, and the 3rd windows 7"). I installed Windows 7, Wind 2003, Linux SuSE, Mac on my pc (for various reason and for R &D) . There is only one HD with 500 gb. So, hopefully ui can do the same with dual / triple booting. Try this, if u have enough patients.....
Keep 70 gb OS X Lion for system / apps, create 50 gb for wind7 and keep rest for ur data and others files (the size may vary according to ur fit). Now practically to make, start installing Lion on single mac ext partition & using bootcamp(http://manuals.info.apple.com/en/boot_camp_install-setup.pdf) to build the partition(www.macupdate.com/app/mac/27367/apple-boot-camp) for wind.
Keep in mind, before do this must create 3rd partition (for ur data etc). Restart and install 7. Remember, remember.... any change to partition after installing 7 will damage the bootcamp partition(so, don't do any change). After doing this, it is not possible to resize / delete / create / modify any part. Plz refer here 2 more links: parallel desktop(www.parallels.com/products/desktop/) and full story with screenshots(www.simplehelp.net/2009/01/15/using-boot-camp-to-install-windows-7-on-your-mac-the-complete-walkthrough/)
