How do I open two separate instances of Excel; using two monitors, how can you put different spreadsheets on each monitor?

Open two separate instance of excel from your desktop or start menu. Manually open a document in each instance via File > Open

    Open an Excel Document, and drag it over to the 2nd monitor. Then open a second Excel and browse to the other Excel document that you want, open this one in the 1st monitor. Not sure which version of Excel you are using....but in some you can also open your two instances of excel, select the view tab and click on Arrange All, which lets you display them side-by-side, or above & below for comparison.
