There is a built in management tool for Hyper-V in Windows Server 2008 (and available for download). You can also buy System Center Virtual Machine Manager, which has advanced management tools, monitoring, and also support to manage other platforms like Virtual Server and VMware.

You did not indicate which Hypervisor you are using (VMware, Xen, HyperV, KVM).
Each of these products comes with its own built in management console, but that is pretty useless in any IT company that has VMs, network, applications and tons of other things to manage and monitor.. most likely you will need a platform that can monitor all these components together.
We have multiple large datacenters and evaluated a number of cloud monitoring products. A simple google will show at least the following:
– Nimsoft
– Solarwinds
– Zyrion
– Compuware
We evaluated about 6 different vendors for our heterogenous private cloud environment and eventually selected Zyrion for monitoring, mainly because of its scalability and breadth of monitoring. Rich API (though most products have that now).
