Why does my Windows Server 2008 automatically reboot after Windows updates? How can I prevent this from happening in the middle of the day?

By default, servers are not enabled for automatic updates – You may disable automatic updating, and check for updates manually to prevent automatic unplanned restarts during operational hours.

You can also set your automatic updates to download but do not install until you tell them to. Then at least you will know when updates are available and can plan the install and reboot.
