Really simple, create a Profile folder and share it on the AD server, in that folder create a folder and give it the name of the user you want to give roaming profile rights to, then go into AD properties of the user you want to create a roaming profile for and click the profile tab, add the path to location of the profile folder on the AD server i.e. \\adserver\profile\username, then have the user login and out several times. You can check to see if it is working by going into the AD server and looking in the profile folder if it is done correctly you will see the users folder folder filling up. Although I'm sure Technochic's link will cover all of this in better detail, definitely check it out.
