If you can still log in, change them.
If not you'll need to contact the web host and get them changed. If they refuse to help (they should be able to once you can prove that you own the site and the account) you'll need to contact the former employee and get the passwords from them.
This is why multiple people should have the passwords for such accounts.

They are usually registered to an email address. If the former employee registered it to his work email address, can’t you just reset his email password and then use the webhost password reset utility?
Agreed – if you have access to your resources, change the admin credentials and the ones the former employee has are useless
