Exchange Server Removal

We currently have two exchange server running. We have mailboxes on both, but one has more mailboxes than the other. The first one (let's call it MS) is currently a Domain Controller and also the Global Catalog, it also hosts other services as well. The second( MAIL) only hosts Exchange emails only. Now I want to free MS by removing Exchange server from it and leaving only MAIL. Remember MS was the First Exchange server installed, while MAIL was installed as an additional exchange server. My questions is: can I remove exchange from MS(first exchange server) and leave only MAIL(the additional Exchange server) running. Will it not affect our installation? I intend moving all mailboxes to the second one (MAIL) before taking any step.
