is there anything more to the error or any events in the eventlog that correspond to the time frame where you tried to start the information store?

One helpful tool to try is to clear the system and application log (saving the logs of course) and then try to simply start the informatuion store, then check the logs for what was placed in there.

I've not seen this specifically on 2007, but I have seen situations where drives were full (either the database drive or the logs drive) and that resulted in the information store dying suddenly and not being able to restart.
