SearchExchange.com has a great article that talks about the new features and improvements that you can expect to see with Exchange Server 2010 SP1. One of the most important new features is the increase in storage provisioning which allows the primary and personal archive mailboxes to reside on different mailbox databases!

In my PoC of Exchnage 2010 (we are on the verge of upgrading from Exchange 2003 to Exchange 2010) I have to say:
1. Shared storage has proved to be paramount for redundancy assurance of the datastores. We have several offices around the world and my design includes datastores spreaded across the world for HA and DR.
2. OWA improvements (you are right Aquacer). OWA has much better features in 2010
3. Archiving which basically replaces the .pst files headaches we all had in the past with 2003.
4. Database IOPs are much miore efficient with improvements of up to 80% from 2003. Also the architecture of the 2010 databases ensure more sequnetial IOPs as opposed to random reads/writes we are used to in old Exchange environment
