a user has changed her last name, is it okay to simply change her name in the user list? what issues could araise from this change in regards to her exchange mailbox?

Yes, it is OK to change her name in Active Directory Users and Computers. It will not change her email address though. After the name is changed, go to the Email address tab in properties and add the SMTP address that reflects her new name. Set the new address as primary. Also change the alias in the Exchange General tab.

As long as you don’t remove the old SMTP address, all emails sent to the old address will still go to her mailbox.
