A keylogger or some other similar utility is one method. Other methods include:

<li>event logging</li><li>network data capture (although the traffic between client and server may be encrypted) – sometimes server to server traffic is not since most SMTP implementations do not use TLS.</li>

    Best thing to do is to install monitoring software, not just a keylogger. That way you can capture not only what is typed but also emails, IMs, websites that are visited, etc. I have also set mine up to take screenshots of computer activity. It's allowed me to see all of the amazing the things my roommates do on my computer when I'm not home. The application I use is called WebWatcher. It logs just about everything that's done on your computer and it also lets you access all of the recorded activity remotely just by logging in to an online account. Why exactly are you trying to access "exactly what was read and/or typed" without accessing the email itself?
