Do I disable DHCP on my router to create a Windows or DHCP server?
Networking, DHCP, Windows server, routers and switches
Do I have to disable DHCP on my router in order to be able to create a DHCP server or a windows server? And how would I configure each?

You use the 
service dhcp
command to enable DHCP server. You have to use 
no service dhcp
to disable DHCP server.
No you do not have to...but you have to have different scopes
