Designing and Planning MOSS 2007 Deployment

Hi IT Folks:Currently I am planning to deploy MOSS 2007 in my university. Currently we have a setup of 1200 systems including laptops and desktops. I want to design a efficient topology and license decision. What should I gather as requirements or information which will be helpful in my planning?
Clients will use MOSS 2007 as collaboration tool. Clients will use our MOSS from their homes through VPN, moreover our branch in USA will also use it thru VPN. Currently we are in Qatar. Please advise as necessary.
