How do you add a numeric field to a system date and have it calculate a new date with the variable numeric number added to the date - ex. 2009-02-07>>> 2009-02-10. (in this example, the numeric value would have a "3" loaded into it)

You did not specify the language or system.
In Excel – just Format the cell as Date. Then you use =Now() + 3 . This should give you the date 3 days ahead.
You can do similar way in Microsoft Access.

Most database platforms and programming languages support the dateadd function.
