I want to create a database that has 20 different training topics and all have different due dates (ex 30days, 25 days). I want to create something that assigns the date to a student then calculates a due date according to what topic I assigned. Can anyone help with this? Also I would like to run a report at the end to see everyone who is past due.

Take a look at the DateAdd and DateDiff functions.  They should help you make the calculations needed to assign the due dates and determine the records to include in your report.
