To due a mistake by one of my co-workers, a USB drive was inserted into one of our company's Ubuntu computers with personal files. We figured out that the files weren't opened thankfully but can we find out if any of the files were copied and saved? Basically - we need to know if the computer scanned the files and put them somewhere. If the answer is yes, what should we do?

Without copy/paste by you or any one, this is not possible to start the process itself by your computer. This is almost not possible due to virus activity, because the system is Linux based, as Linux is very less affected by virus. You can check by find command with the particular file name, which you are suspected to store itself. But the chances are very few.
