Hi, I am trying to find out the demographics (age, gender, ethnicity etc) of my final subject pool on SPSS. I used a survey type questionnaire, and want to know which subjects completed all the measures of interest. I f I do a cross tabs with ageXgender, for example, I don't know which of THESE subjects also completed the other measures of interest (each measure contains 3-10 items in itself). Further, If I want to create an aggregate measure from specific items, how do I ensure that the subject answered each of the measures items to be included in the total measure?

Take each of the measures items in your each row of an excel sheet (or any table), and each demographic requirement in each column, then fill the values and see the results by picking any selective items from your columns vs all the items in your rows. If you are doing a cross tab, by writing appropriate queries you can achieve that.
