Copying/Mirroring 2003 Exchange

Currently we have a Windows 2003 Server running 2003 Exchnage as a domain controller. What we are trying to do is backup and copy our current exchange data to a new server and exchange we have installed. Then mirror the two servers. Shut down the original without having losing email time. Then reconfig the origninal server to not be a domain controller. Then copy back the data and mirror the exchange back. Is all this possible with 2003 Exchanage and do you have any suggestions.
