We want to connect one keyboard, mouse and monitor to all systems in our datacenter. We want to do this over tcp/ip and not run a lot of cables. What equipment will facilitate this?

What do “all systems in {y}our datacenter” consist of? What kinds of systems are they? What OS do they run?
For my own Windows systems in my own network, I usually just use Remote Desktop Sharing.
If this type of equipment was cheap, it could put a damper on services like GoToMyPC and pcAnywhere. You obviously don’t want just any remote system capable of sending keyboard/mouse commands to your datacenter systems over TCP/IP.

We use a couple of Avocent AutoView 3100/3200. We’ve had them for a while and I’m sure they (and others) have improved units. It allows us to have 16 servers connected to one console, keyboard, mouse. It also allows us to remote into it via IP and take over any console using java. Over a slow connection the java can be brutal but over high speed it’s useable. This should give you a start on your search.
just use RDP, it’s a little more reliable than VNC
