You didn't provide any information about how you are backing up the systems.

If you are doing a backup within SQL via a SQL Agent Job, then you are backing up the SQL Server. If you are backing up the database, using the SQL module of a backup software package like Commvault, NetBackup, etc then you are backing up the SQL Server. If you are doing a backup with any other method, you aren't doing a valid backup of the database, and it shouldn't be trusted for a restore.

Can you provide more information (in the comments below) about how you are backing everything up? What software you use, to where you backup, etc.

You may want to hire a SQL Server consultant for a few hours to take a look at your backup setup, and recommend any changes if you don't have a SQL Server DBA in house. You could either hire someone local, or hire someone remote and have them VPN in a look at your backup strategy.
