Yes, CAT6 is backwards compatible with 5/5e.

The patch cords you have will be OK - but I believe there are some minor differences in punching down cables. You really shouldn’t be using Cat6 panels and then PUNCHING DOWN cat-5 cables to the back of them. Wire gauge and twists/foot, and all that stuff.

Really? We used Cat5E cable in Cat7 punchdowns at our new office without issue.
