Can’t Synch Outlook email folder through cable
When I synchronize everything but my email goes on to my device (calendar, contacts, tasks, etc. all synch fine). I can see and open the email folders on my device but they are empty.

Check your synch properties for each folder. I had to tell my device to synch the folders I wanted. I could see them all, but they were empty as you say. I was not using the desktop utility, I was synching with my exchange server and I had to go into folder options and check the folders I wanted to synch from the manage folder options on my device. See if there is an option in the desktop utility to set these as well.
