I think you should be able to Virtualize most, if not all, of your servers. Now even though you can, you should virtualize in steps, meaning you should use a tool loike the Microsoft MAP (Assessment and Planning) tool to determine which are valid candidates, and then plan a virtualization strategy. Eventually you may get to 100%, and it would be good to see. please check out the MAP tool and resources by going through http://www.microsoft.com/virtualization and check out the resources section.
