Depending on the make and model of the proxy, you do not have to use both ethernet interfaces. Most proxy servers just need a single connection to the network. They have two connections in case you want to force all traffic through your proxy, but if you just want to block certain websites, you can set a group policy or manually configure your internet browsers to use the proxy in Internet options -> Connections Tab -> Lan Settings. Check use Proxy server.
