Hyper-V is actually a small piece of code to enable the Virtualization capabilities. The benefits it provides are huge for things like Server Consolidation, infrastructure optimization, easing IT Management workloads. True, every VM is its own OS with its own set of disk space requirements, but leveraging SAN technologies where they can do things like de-duplication and such limit that, so the systems don’t have to be HUGE. Virtualization has been around since the 60’s, it is now on x64 systems.
