You need a backup software like Nero Backup. To span multiple DVD's the software is required to encode how it is spanned and the same software will be the only one that you can use to restore that data.

Thanks, Mshen. I was told similar on the imgburn forums. I do not want to have to do a backup then a restore to be able to watch the .dv files. I’m hoping I can find a way to get the actual .dv files on DVD, maybe some type of file splitting utility?
You should convert the .dv files to another format, like .avi or .wmv. The compression ratio is a lot better, so you will be able to fit several hours of video on a single dvd. There are a lot of video conversion software packages that do this, including Windows Media Encoder.
