What is the best operating system for a dedicated server serving virtual servers? Does it matter? It will be running all types of OSes. It will host Linux, Windows and Mac OSes.

VMware’s vSphere or Microsoft’s Hyper-V will work fine.

I’m not sure that you’ll be able to setup a Mac VM as the BIOS won’t have what the Mac OS is looking for to boot. Last I heard the Mac OS license didn’t allow for you to virtualize it.
