Ad-hoc is a very vague term, is it in context of wireless or wired, how temporary or how long is it required, how much aesthetics has to be kept in mind if it has to be wired (like can you afford to keep switches, wires hanging on the wall or lying on the floor), how many nodes network, what type of network etc. are required to be know for giving a proper solution.

Depending on what you want to do, Ad-Hoc may not be the best choice. You you explain the application of the network you want to develop?
